I never thought I’d get excited about beans. That is until I met the Coco de Paimpol.
An AOP semi dried bean that comes from Brittany, these beans are quick to cook and hold their perfect plump shape.
You need about 500g for two people as a side. I bought just under a kilo and it has done 2 main meals (with some protein) for both of us plus some left over that I reheated for lunch today.
Just pod the beans and flavour them as you fancy.
As a base it’s a good idea to gently fry an onion and then you can add garlic, fresh thyme, finely pared lemon rind (if serving with fish) or some lardons cooked until the fat runs, a finely chopped carrot, a few chilli flakes and a peeled chopped tomato or two (if serving with sausages or chicken).
Add water or stock to just cover and bring to a simmer. Simmer gently for about 25 minutes, check a bean and if it’s tender then turn off and if not, cook for another 5 minutes and test again.
They are very forgiving and easily reheat the following day without going pasty or falling apart.
