A super easy recipe for you that is really tasty and perfect for a mid-week supper. Light and low in calories, it’s healthy but there is heaps of flavour. I use instant noodles (just ditch the flavouring sachet!).
For 2 generous servings you will need:
1 tablespoon of light soy sauce
1 tablespoon of dark soy sauce
2 tablespoons of oyster sauce
1 teaspoon of mirin or rice wine (not essential if you don’t have it)
1 teaspoon of sesame oil
2 chicken breasts sliced finely
Half a red pepper and half a yellow pepper or a whole one of one colour sliced finely
A couple of handfuls of mange tout sliced finely
A piece of fresh ginger (around 3cm peeled and finely shredded)
2 cloves of garlic peeled and finely sliced
A red onion finely sliced
Instant wok noodles (the type that come flavoured and you pour boiling water on). Open the packet and ditch the sachet of flavouring.
Method
- Heat a tablespoon of neutral oil in a wok or non stick frying pan and when hot quickly fry the ginger, garlic and onion
- Add the sliced chicken and stir for a minute before pouring in the soy sauces, oyster sauce, mirin and sesame oil.
- Fry for a minute or two and then add the peppers and mange tout. Continue cooking for a minute or two.
- Move the stir fry to one side and pour a little water into the pan (around 200ml per serving of noodles)

Just ditch the packet of seasoning and pop the noodles in the side of the wok in the water
- Pop the noodles into the water and leave for a minute
- Turn over and leave for another minute

Leave them for a minute, then flip over and leave for another minute.
- Break the noodles up with a fork and mix in with the rest of your ingredients et voila!

Sir the noodles into your other ingredients et voila!
