Looking for something for a picnic that’s just a bit different. These spicy omelette wraps are really tasty and are equally good warm or cold.
To make 2 wraps you’ll need:
One tomato seeded and finely chopped
A small red onion finely chopped
4 eggs (2 per wrap)
Fresh coriander
Salt and pepper
A green chilli finely chopped (use more or less according to your taste)
A little oil/butter for frying
Chilli jam or sweet chilli sauce
Ready made wraps (I used Old El Paso Extra Moelleux but any soft wraps will do)
Putting them together is super easy. Have your ingredients ready and use 2 beaten eggs at a time seasoned with sea salt and pepper.
Put a knob of butter and a drizzle of oil in a non stick pan over a medium heat. While that heats up add half your chopped tomato and half your red onion into the beaten eggs, add a little chopped coriander and half the chopped chilli (less if you don’t want too much of a kick).
When the oil/butter is hot, pour in the egg mixture and swirl it so it coats the pan and the filling ingredients are evenly spaced out.
When it has just started to set, pop on a wrap and gently push it down with your fingers to it adheres to the omelette. Cook for another 30 seconds then flip it over and cook it wrap side down for another minute.
Flip it out onto a board and then cook the other one as before.
Spread a layer of chilli jam or sweet chilli sauce over the eggy side, sprinkle over some more fresh coriander and then roll up.
Cut in two at an angle et voila! Bon appetit!
