Recipes from Le Tasting Room’s kitchen – skinny courgette fries

These skinny courgette fries are totally addictive. Don’t be fooled. They are lethal. Deep fried, crispy and sprinkled with sea salt they’ll have you hooked from the first taste.

These are easier to make if you have a deep fat fryer but you can use a saucepan no problem.

For 2 people as an accompaniment you’ll need:

A medium sized courgette (yellow or green)

100g of plain flour seasoned (you might need a bit more)

100ml milk

Method:

Preheat your fat or deep fat fryer to 190°C

Cut the courgette into fine batons around 3mm thick (skinny fry size!)

Dip the courgette batons into the milk and then toss in the flour

Pop in the hot oil and cook for 3 minutes

Take them out, sprinkle with sea salt and enjoy!

Fish chips and mushy peas (with a twist)

They are great as a side or just on their own as a nibble with drinks.

I served them with some lieu noir wrapped in prosciutto cooked in the oven and a pea and mint purée. The classic fish and chips with mushy peas (with a twist).

For more people just up the quantities and cook in batches!
