For me, this is the best chocolate mousse recipe. Incredibly simple and very chocolatey, it’s not too terrible on the calories (around 170 per mousse) is low in carbs and has no cream or butter in it, just 3 ingredients.
You will need:
120g best quality dark chocolate (min 70% cocoa) Using good quality chocolate is the key here so don’t be tempted to use cheap chocolate that is low in cocoa
2 egg yolks and 5 egg whites
40g caster sugar
Break the chocolate into squares and gently melt in a bowl placed over a saucepan of barely simmering water. When it has melted take it off the heat.

Put your egg whites in the Kitchenaid or beat with a hand held beater until they are at the soft peak stage, then sprinkle over the 40g of sugar and continue beating until they are firm

Add your 2 egg yolks to the melted chocolate and quickly mix. Take a good couple of spoons of your beaten egg whites and beat them in quickly to loosen the mixture slightly.

Gently fold in the remaining beaten egg whites a little at a time using a large metal spoon.

These quantities make 6 mousses. I put a few strawberries in the bottom of my containers and gently spooned the chocolate mousse on top
