What’s on the cheeseboard this week? Sablé de Wissant

France Fromages in the covered market in Les Halles, Tours has over 300 different cheeses.

This week we chose a new one to us, a Sablé de Wissant.

Sablé de Wissant is made by the Bernard brothers who are artisanale cheese makers in Wierre-Effroy in the Pas de Calais region in the north of France.

It’s a ‘pavé carré’ (like a square paving stone) that is 12cm wide and 3cm high. Made from pasteurised milk its rind is washed in Wissant beer and then sprinkled with breadcrumbs. The cheese is smooth with holes here and there.

It has quite a strong character on the palate. We detected notes of condensed milk and cauliflower cheese as well as a hint of beer!

Serve a fruity beer alongside as part of a light lunch with apples, nuts and crackers or a light white.
