2 super quick simple summer salads for you. Cucumber, creme fraiche and garlic salad and kidney bean, cumin and coriander salad. Healthy, low fat, quick and tasty.
Cucumber salad
A cucumber peeled, deseeded and cut into rings
A couple of tablespoons of creme fraiche (could also be greek yoghurt, low fat yoghurt or fromage frais)
A clove of garlic crushed using sea salt so you end up with a fine paste
Ground black pepper
A little freshly chopped mint to sprinkle on the top
Peel your cucumber, peel and cut into slices. Pop the slices into a bowl, add the creme fraiche, crushed garlic purée, ground black pepper. Stir to coat the cucumber evenly and serve sprinkled with a little fresh mint.
Red bean salad
A 400g tin of red kidney beans
2 teaspoons of cumin seeds toasted
A bunch of fresh coriander (cilantro)
The juice of a lemon
A red onion finely sliced
Drain the kidney beans and pop in a bowl. Add the finely chopped red onion, toasted cumin seeds, lemon juice and fresh coriander. Add sea salt to taste (it needs quite a bit).
Voila! There you go. We served with a hard boiled egg and a smidge of mayonnaise to make a light summer lunch.
