This is a lovely summer salad. Make it when all the ingredients are tasting at their best and it’s hard to beat on a hot day in the garden.
You’ll need
About half a Charentais melon
Half a cucumber
A couple of really big tomatoes (different colours is nice)
Goat’s cheese (I used a smoked one but any will do or even Feta)
1 tbs red wine or sherry vinegar
2/3 tbs olive oil (decent)
A pinch of caster sugar
Sea salt and ground black pepper
Fresh mint
Remove the seeds and rind from the melon and cut into long slices.
Peel the cucumber and cut into slices across the bias
Slice the tomatoes
Place the melon on a large plate, add the cucumber and tomato slices and then crumble over some goat’s cheese. Season with sea salt and pepper.
Whisk the dressing ingredients together and drizzle evenly over the top. Sprinkle with fresh mint et voila!
So easy and delicious! Perfect for a veggie option or you can do as we did and add some prosciutto and speck around the side for a slightly more substantial lunch.
