Another super easy recipe for your summer table. This is delicious and takes just 5 minutes to prepare. Serve it on its own for a light starter or alongside grilled fish straight from the bbq.
For 2 people as a side you’ll need
1 medium courgette
A small chilli finely minced or a sprinkle of red chilli flakes
The juice of half a lemon
2-3 tablespoons of good olive oil
Salt
A few sprigs of fresh mint finely chopped
Using a speed peeler or mandoline, peel fine ribbons of raw courgette into a bowl .
Mix the lemon juice with the olive oil and add salt to taste (lemon juice and salt are great partners so don’t skimp);
Gently dress the courgette ribbons and place them on a platter. Sprinkle over the chopped chilli or chilli flakes (or neither if you don’t like a kick of heat).
Sprinkle over the chopped mint et voila!
