A delicious Swiss cheese made from raw milk, Maréchal is one our favourites.
Marechal is an artisanal cheese made by the Rapin family and honours Emile Rapin, the great grandfather.
Emile was a blacksmith (a maréchal-ferrant in French) from Corcelles-près-Payerne but it’s Jean-Michel, Gregory, Kevin and Mathias Rapin who run the business today, making this delicious cheese from milk collected every day from 13 farms in the Vaud.
Interestingly, the fodder the cows receive contains high levels of linseed which is easily digested and results in a much reduced carbon footprint!
To make the cheese, the milk is heated, mixed with rennet and selected cultures and then the curds are pressed and cut into pieces that are then pressed into a round mould.
After being plunged in brine they’re then aged over a 4 month period and are rubbed with fresh herbs.
The texture is smooth and creamy. Semi-hard, fruity, herby, buttery and nutty.
