Made in the region around Loches, the pretty town in the Touraine region of the Loire valley, La Couronne Lochoise is a raw whole milk goat’s cheese in the form of a crown (couronne).
La Couronne has been lightly dusted with ash or ‘cendré’ as we would say in French which explains its grey colour and the downy appearance in the centre is from the development of penicillin.
The cheese itself is smooth and creamy with a fresh, clean taste. It doesn’t have a strong goaty aroma and varies in texture according to how long it has been aged.
Only one producer makes this cheese, the Fréval farm that created it, based in Betz-le-Chateau in the department of Indre et Loir (37). It goes beautifully with a fresh Touraine Sauvignon Blanc such as Les Sauterelles from Lionel Gosseaume, one of our favourite producers in the Touraine region.
As this cheese is in the shape of a ring, you cut it as you would a cake.
