For a really easy dinner idea try this really simple marinade. It works well on chicken thighs or breasts and is healthy and quick to prepare.
You will need:
Harissa – around a teaspoon or more if you like things fiery
Greek yoghurt – 2 tablespoons
Olive oil – a couple of tablespoons
Salt and pepper
A couple of sprigs of mint
Mix the harissa in with the yoghurt, drizzle in the olive oil, mix and season with salt and pepper. Massage this into your thighs (chicken thighs that is) and leave to marinade for at least a couple of hours. Overnight is great but not essential.
When it comes to cooking, you can roast the chicken thighs or legs in the oven, bbq or in the case of chicken breasts, cook in a non-stick pan on the top of the stove. Serve sprinkled with some freshly chopped mint.

Tip: you can use less oil for a more healthy option and low fat greek yoghurt. It also works well on a whole pork fillet roasted in the oven for around 20 minutes and left to rest for 10 minutes before carving. I like Cap Bon harissa which is Tunisien. Basically it’s hot peppers mixed with garlic, coriander, salt and caraway. If you don’t have it in your storecupboard you could make your own using tomato paste adding chilli and the spices to taste along with a clove of finely chopped garlic.
