Midweek dinners – cod with roast peppers and tomatoes

Mid week dinner

It’s been pretty hot here for the past two days so we fancied something light for dinner. The tomatoes are just coming into season but they don’t taste up to scratch yet so we decided to roast some alongside some peppers, garlic, a few par boiled new potatoes, one red chilli finely diced and a teaspoon of smoked paprika. After about 45 minutes in the oven we popped our cod on the top for a further 12 minutes to cook and served with a little chopped coriander and a drizzle of olive oil.

Great garden food that is just as good at room temperature.
