Here's a before and after shot of pruning.  In the first photo all the wood from 2009 is still there.  Nigel  decides which canes to choose - he selects one cane on either side of the vine and a spur below each one.  The canes will bear this year's fruit and the spurs will provide a back-up in the event of frost and provide a possible cane for next year's fruit.

This system is called Double Guyot (Guyot Double) because it retains 2 canes from the previous year's wood to bear the following year's fruit.  If only one cane is retained then this is called Single Guyot (Guyot Simple), also common in the Loire.
